Almond Butter Two Ways

Almond butter on crunchy toast with a drizzle of maple syrup, this one’s not just for baby

OFTEN OVERLOOKED BUT NOT BY US VEGGIES. NUTS ARE FULL OF PROTEIN, FIBRE, LOADS OF VITAMINS AND MINERALS AND THEY’RE REALLY TASTY TOO.

While you can easily get hold of jarred nut butters, making your own is not only cheaper but you can have fun with it, experimenting with flavours and combinations of different nuts. Hazelnut and almond is a favourite of mine. I love stuffing medjool dates with almond butter (thanks @deliciouslyella for that one) but Elsi hasn’t taken to dates yet. I tend to use nut butter more for her savoury dishes like this recipe for Peanut and Soy Tofu Stir-fry.

INGREDIENTS

  • 2 cups of Almonds
  • A pinch of Salt

METHOD

Roast your almonds for around 5 minutes in a hot oven. This will intensify and deepen their flavour. You can miss this step out of you are pushed for time. After they’ve roasted let them cool slightly before adding them to a food processor. You can pop them out of their skins if you want a super smooth texture but I have a toddler and I don’t have the time or inclination! Add your salt and start the engine! It won’t happen quickly, you’ll need to wait around 15 minutes, giving the occasional scrape with a spatula to make sure you’re mixing it efficiently. Once it’s really silky smooth you can pour into a sterile container. It should keep in the fridge for a few weeks.

PIMPED INGREDIENTS

  • 2 cups of Almonds
  • A pinch of Salt
  • Seeds form 1 Vanilla Pod
  • 1/2 tsp Cinnamon
  • 1 tbs Coconut Oil

METHOD

As above initially, then after your nuts have been in the food processor for around 5 minutes add in the rest of your ingredients. Taste it before you jar it and up the cinnamon if it needs more. You can even stir in a spoonful of honey or maple syrup if you like things sweet.
